How to make broth
【Ingredients】
- Thin Shavings 30g
 - Water 1ℓ
 
- Boil the water in a pot.
 - Put the flakes(thin shavings) in the boiled water at once.
 - Boil for one minute and turn off the heat. Wait for a few minutes to see the flakes sink.
 - Drain the broth in a strainer.
 

How to make a Japanese rice seasoning
【Ingredients】
- Used up flakes from the first Dashi
 - Sugar 1 teaspoon
 - Sweet Sake 1 teaspoon
 - Soy Sauce 1 teaspoon
 - White Sesame 1~2 teaspoons
 
- Put the used up flakes in a pan on medium heat.
 - When the flakes become almost dried, turn the heat low and put the sugar, sweet sake, and soy sauce and mix.
 - When the condiments are well mixed, turn off the heat.
 - Sprinkle the sesame over the flakes.
 

*This recipe is common to bonito flakes, Soda bonito flakes, and mackerel flakes.
