Snow Peas with Soft Simmered Egg
“A spring dish that brings out natural sweetness and rich flavor.”
[Ingredients] (Serves 3)
- Snow peas・・・20–30 pods
- New onion (or regular onion)・・・1/2
- Aburaage (fried tofu pouch)・・・1 piece
- Eggs・・・2
- Dashi broth・・・200ml
- Soy sauce・・・1 tsp
- Mirin・・・1 tsp
- Salt・・・1 pinch
- Remove the strings from the snow peas. Peel the new onion and slice it thinly.
- Pour hot water over the aburaage to remove excess oil, then slice it into thin strips.
- Heat 200ml of dashi broth in a pot, then add soy sauce, mirin, and salt.
- Once the broth comes to a boil, add the onion and aburaage, and simmer for about 3 minutes.
- When the onion becomes tender, add the snow peas and simmer for 1 minute.
- Pour the beaten eggs over the snow peas, and turn off the heat when the eggs are softly set.
- Cover the pot and let it steam for 1–2 minutes, then serve in bowls.

② Soft-cooked eggs blend best with the ingredients.
*This recipe uses the freshly made “Izu Blend” dashi packet. Other types of dashi may also be used.
