Snow Peas with Soft Simmered Egg

[Ingredients] (Serves 3)
  • Snow peas・・・20–30 pods
  • New onion (or regular onion)・・・1/2
  • Aburaage (fried tofu pouch)・・・1 piece
  • Eggs・・・2
  • Dashi broth・・・200ml
  • Soy sauce・・・1 tsp
  • Mirin・・・1 tsp
  • Salt・・・1 pinch
  1. Remove the strings from the snow peas. Peel the new onion and slice it thinly.
  2. Pour hot water over the aburaage to remove excess oil, then slice it into thin strips.
  3. Heat 200ml of dashi broth in a pot, then add soy sauce, mirin, and salt.
  4. Once the broth comes to a boil, add the onion and aburaage, and simmer for about 3 minutes.
  5. When the onion becomes tender, add the snow peas and simmer for 1 minute.
  6. Pour the beaten eggs over the snow peas, and turn off the heat when the eggs are softly set.
  7. Cover the pot and let it steam for 1–2 minutes, then serve in bowls.

② Soft-cooked eggs blend best with the ingredients.

*This recipe uses the freshly made “Izu Blend” dashi packet. Other types of dashi may also be used.
