Hijiki and Fried Tofu Mixed Rice

【Ingredients】(Serves 4)
  • Rice・・・2 cups
  • Water・・・400ml
  • Fried tofu (aburaage)・・・2 sheets
  • Dried rice hijiki・・・1 tbsp
  • Carrot・・・1/2
  • Dashi packet・・・1 packet
  • Mirin・・・2 tbsp
  • Soy sauce・・・2 tbsp
  • Sake・・・2 tbsp
  • Salt・・・1/2 tsp
  1. Wash the rice and place it in the rice cooker. Add water and the dashi packet, then let it soak for 30 minutes.
  2. Soak the rice hijiki in water for 15–20 minutes, then drain with a colander.
  3. Pour hot water over the fried tofu to remove excess oil, cut it in half lengthwise, then slice thinly.
  4. Cut the carrot into thin strips about 2–3cm long.
  5. Add mirin, soy sauce, sake, and salt to the rice cooker and mix lightly. Then place the carrot, fried tofu, and rice hijiki on top.
  6. Cook in the rice cooker using the normal setting.
  7. Once cooked, remove the dashi packet and gently fluff and mix the rice.
☆Tips☆
① Soaking the dashi packet together with the rice for 30 minutes allows the dashi flavor to fully infuse.
② Leave the dashi packet in the rice cooker while cooking the rice.

※ This recipe uses the freshly made dashi packet “Mt. Fuji Blend.” Other types of dashi may also be used.
