Furofuki Daikon – Enjoy the Full Flavor of Daikon Radish
“A simple dish where delicate dashi and sweet miso bring out the natural flavor of the ingredients.”
[Ingredients] (Serves 4–5)
- Daikon radish・・・1/2
- Dashi packet・・・1 packet
- Salt・・・1/2 tsp
- Water・・・500ml
- Miso・・・2 tbsp
- Sugar・・・2 tbsp
- Mirin・・・1 tbsp
- Cut the daikon into 4cm-thick rounds and peel the skin thickly.
- Add water, the dashi packet, and salt to a pressure cooker. Arrange the daikon inside and close the lid.
- Cook over high heat. Once the pressure indicator begins to spin, reduce to low heat and pressure-cook for 10 minutes. (If using a regular pot, score a cross-shaped cut on one side of each daikon piece and simmer for about 30 minutes.)
- Turn off the heat and wait until the pressure indicator pin drops.
- In a heatproof bowl, combine the miso, sugar, and mirin. Mix well, loosely cover with plastic wrap, and microwave at 500W for 1 minute.
- Once the pressure is fully released, open the lid and insert a bamboo skewer into the daikon.
- If the skewer slides through easily, transfer the daikon to serving bowls. (If the center is still firm, continue simmering without the lid until tender.)
- Mix the miso sauce well and spoon it over the daikon.
① Using a dashi packet and pressure cooker allows the daikon to become fluffy and full of dashi flavor in a short time.
② For extra aroma, garnish the miso with thin strips of yuzu peel if desired.
*This recipe uses the freshly made “Mt. Fuji Blend” dashi packet. Other types of dashi may also be used.
